The Best and Easiest Vegan Eggplant Tacos

Who does not LOVE tacos! They almost always taste good, you can not mess up a taco, yet recently I have CREATED my own taco recipe and I have to say it is delicious! Now I know that food bloggers have recipes that make you scroll down for hours searching for the actually recipe, instead of their life bibliography, so I will get straight to the point.

You will need:

  1. One Tofu pack
  2. One-Three Eggplants (depending on the kind)
  3. A small pack of tortillas
  4. Some Vegan cheese (spacificly Chao Slices)
  5. Dill
  6. Tomatoes
  7. Cilantro
  8. Onion Powder
  9. Garlic Powder
  10. Paprika
  11. turmeric
  12. Onion

You will need to get out your frying pans! You will need about three frying pans. One for the eggplant, one for the tofu, and one for the tortillas.

First remove the water from the tofu by just squishing it with a paper towel. Then put it in the frying pan on high heat. Add some turmeric, paprika, onion powder, and garlic powder. Don’t forget to add some olive oil. Mix and fry, for about 5-10 minutes, you will know it’s done once you taste it. There is no set amount of spices, rely on your taste preference. If you want more spiciness add paprika, the amount of spices you want to add is completely up to you! The tofu will look like scrabbled eggs, thanks to the turmeric.

Second, put the pan on a low heat. Add some garlic, and oil (olive oil preferred) to the pan. After that begin to cut up the eggplant and onion. If you want I would recommend throwing a tomato in there. Throw it into the pan and add some paprika, onion powder, and garlic powder. The amount of the spices you want to add is up to you. Mix and then let it steam for a little.

Now you just wait. Once the eggplant and tofu are done use the third frying pan and put the tortillas onto it, at a high heat. Then cut the Chao cheese in half and place each half on each tortilla. Once the cheese begins to bubble you put the tacos on your plate. After this you put some tofu in each of your tacos, then you put some eggplant in your tacos as well. After that you add some dill, cilantro, and tomatoes.

AND THAT IS IT! A SUPER QUICK, EASY, and DELICIOUS meal!

  1. I love how you say choose the amount of spices by eye. cause I do that. I do not like having measurements. Measurements aren’t cooking! You need to experiment! Gonna try these thanks!
